The Pinot Nero Sande was born in the late 1980s, the fruit of an innovative vision for the Veronese territory. The low yields resulting from the pruning method employed create grapes that, at ripening, display an extraordinary concentration of sugars and aromas. The subsequent drying process further concentrates the full aromatic potential of the fruits, thus creating a wine that is unique in its category.
Characteristics
Vinification:
Harvest: Manual, in the last days of August and the first days of September.
Fermentation: In truncated cone-shaped oak barrels with manual pressing of the grapes for approximately 15 days.
Aging: In barrique for a minimum of 48 months, depending on the season.
Terroir and Viticulture:
Sande comes from vineyards on clay and limestone soil, slightly sloping. The training system is spurred cordon, with a very low yield of 50 quintals per hectare, which contributes to the concentration of the grapes.
Organoleptic Characteristics:
COLOR: Intense ruby red.
BOUQUET: Intense aromas typical of dried grapes, spicy notes that combine harmoniously with hints of ripe red fruit.
TASTE: The fine and persistent tannins balance the high alcohol content, giving overall a very persistent finish.

Sande is a wine with great structure that lends itself to numerous refined gastronomic combinations:
Red meat: Braised beef, Florentine rib-eye, fillet with green pepper
Game: Stewed venison, roast pheasant, wild boar hunter style
First courses: Pappardelle with hare ragù, black truffle risotto
Mature cheeses: Parmigiano Reggiano aged 36 months, Monte Veronese
End of meal: Excellent meditation wine, perfect with a quality cigar

Serving temperature: 18°C
Decanting: Strongly recommended, especially for older vintages
Aging potential: Over 20 years in optimal storage conditions
