Vinification:

Harvest: Manual in the first two weeks of September.
Drying: The bunches are hung by hand on a vertical net for 5-6 months.
Pressing: Soft, towards the end of February.
Fermentation: 15-20 days.
Aging: In barrique for 24-30 months.

Terroir and viticulture:

San Zeno comes from vineyards with silty, sandy, clayey, medium-textured soil. The cultivation systems are the short Veronese pergola and the guyot, with a yield of 40 quintals per hectare.

Organoleptic characteristics:

COLOR: Intense amber color.
BOUQUET: Sweet spices, toasted barley, ripe white fruit, with notes of lime and honeysuckle.
TASTE: Full flavor with a bitter aftertaste, which gives pleasantness to the honeyed dessert. Notes of vanilla, spices, bitter almond and ripe fruit.

Food and wine:

“San Zeno” Bianco Veneto Passito IGT pairs perfectly with dry sweets, especially based on hazelnuts, almonds and dried fruit, blue cheeses combined with different types of honey and jams, dry pastries
