We planted the Perantonie vineyard about 30 years ago, among the first to be introduced in the Val d’Illasi. Driven by the search for an aromatic grape variety for the production of sparkling wine, Chardonnay Perantonie has revealed over time ideal characteristics for the production of a great still white wine. This wine represents the evolution and adaptation of Chardonnay to the Veronese terroir, offering a unique and refined interpretation of this international grape variety.
Characteristics
Vinification:
Harvest: Manual starting from the first week of September.
Maceration: Cold in contact with the skins for 12-15 hours.
Fermentation: In steel fermenters for about 10 days at a controlled temperature.
Aging: In oak barrels.
Terroir and viticulture:
Perantonie comes from vineyards located at the foot of the hills with silty, sandy and stony soil. The cultivation system is the short Veronese pergola, with a yield of 80 quintals per hectare.
Organoleptic characteristics:
COLOR: Bright straw yellow.
FRAGRANCE: Hints of citrus and tropical fruit.
TASTE: Elegant and harmonious, with a good acidity that creates a great balance with the body due to the refinement in oak barrels.
