Vinification:

Harvest: Manual, between late September and early October. Selection of the best grape bunches.
Withering: Grapes rest for over 4 months in small wooden crates.
Fermentation: In stainless steel tanks for 10-15 days.
Aging: In barriques for 9 years.
Bottle Aging: At least one year before commercialization.

Terroir and Viticulture:

Hilly vineyards with highly draining soils, calcareous with flakes and a small percentage of silt. The training system is Guyot.

Organoleptic Characteristics:

COLOR: Bright red.
AROMA: Spices, cloves, cinnamon, black pepper, red fruits, and new leather.
TASTE: Full-bodied, warm, smooth, and sweet. Supported by excellent, slightly spicy tannins. Well-balanced, as the sweetness is counterbalanced by a tannic and slightly salty note.

Food Pairings:

A classic dessert wine. Pairs beautifully with dry pastries such as sbrisolona, zaletti, or cantucci, aged and blue cheeses and dark chocolate. Best enjoyed in good company.

Storage and service:

Serving temperature: 16-18°C
Decanting: It is recommended to decant the wine at least an hour before serving to fully appreciate its aromatic evolution
Storage: In a cool (12-14°C), dark and vibration-free place, with the bottle lying down
Available formats: 50 ml
Recommended glass: Large tulip-shaped glass to better appreciate the bouquet
