Once a year in Cantina Fasoli a tasting panel is held in which new ideas and experiments are discussed. The Creaman Pas Dosè was born from one of these chats. This wine is designed for lovers of highly typical wines, where the producer’s intervention is aimed at preserving the typical characteristics of the grape, in this case Garganega. After 80 months on the yeasts, the Garganega grape is able to preserve a stunning freshness that Fasoli Gino has decided not to alter or cover with liqueur or sugars, maintaining the wine in its purity.
Characteristics
Vinification:
Harvest: Manual, brought forward to the end of August and beginning of September, selecting bunches under the foliage not exposed to the sun’s rays.
Maceration: The skins remain in contact with the must at 6°C for 10-12 hours.
Fermentation: In stainless steel tanks for 10-15 days at a controlled temperature of 16°C.
Refinement: Resting on the yeasts in the bottle for 120 months, followed by remuage for about a month and disgorgement without adding liqueur.
Terroir and viticulture:
Creaman Pas Dosè comes from vineyards with clayey soil. The cultivation system is the Veronese pergola, with a yield of 90 quintals per hectare.
Organoleptic characteristics:
COLOR: Golden yellow, vivid and brilliant, with fine and persistent bubbles.
BOUQUET: Strong notes of wild flowers, bread crust and citrus hints, in particular bergamot.
TASTE: Great softness contrasted by a very fresh verve and pronounced minerality. It concludes with a pleasant fruity return.
