Originating in the 1990s from the ancient vines of the Orgno vineyard, Calle was the first vineyard where the Fasoli brothers experimented with biodynamic farming practices, nurturing its vitality from the very preparation of the soil. Named after the beautiful and tranquil hilltop locale of La Calle, bordering Illasi, this 100% Merlot embodies the excellence of Veronese biodynamic viticulture, offering a unique and intense sensory experience.
Characteristics
Vinification and Aging:
Harvest: Manual, in the first 15 days of September.
Drying: The grapes are hung on nets for 80 days, following the local drying tradition.
Fermentation: In stainless steel tanks at controlled temperatures.
Aging: In French oak barriques for a minimum of 24 months.
Further refinement in the bottle before marketing.
Organoleptic characteristics:
COLOR: Intense ruby red.
FRAGRANCE: Complex bouquet with notes of ripe red fruit, leather, truffle, licorice
TASTE: This wine is full- bodied and rich with great ba- lance. A warm and vigorous Merlot
Terroir and viticulture:
The Calle originates from vineyards situated on calcareous flat terrain. The pruning systems employed are both the traditional Veronese pergola and guyot, allowing for perfect grape ripening thanks to optimal sun exposure. The yield is limited to 50 quintals per hectare, ensuring maximum concentration and quality of the grapes.

Calle goes very well with a variety of dishes, especially those typical of autumn and winter:
Mature cheeses: Parmigiano Reggiano aged 36 months, farmed Monte Veronese, Grana Padano
Red meat: Florentine steak, sliced beef, braised veal
Game: Stewed wild boar, baked roe deer, jugged hare
Structured first courses: Truffle risotto, pappardelle with wild boar ragù, Bolognese lasagne
Dessert: Excellent with dark chocolate or red fruit cakes
Storage and service:
Serving temperature: 13-14°C
Decanting: Recommended at least one hour before serving to fully appreciate its aromatic evolution
Aging potential: Over 15 years in optimal conditions
