The Amarone is renowned worldwide as a synonym for quality: a wine of great class, emblematic of the Veronese territory. Since the 1990s, “Alteo” has represented one of the crown jewels of the Fasoli Gino winery. With its elegance and power, it perfectly embodies our philosophy, which aims for harmony in a subtle balance between muscular structure and fine softness.
Characteristics
Vinification:
Harvest: Manual, between late September and early October. Selection of the best grape bunches.
Withering: Grapes rest for over 4 months in small wooden crates.
Fermentation: In stainless steel tanks for 25-35 days.
Aging: In barriques for a minimum of 3 years, with periodic organoleptic tastings.
Bottle Aging: At least one year before commercialization.
Terroir and Viticulture:
Alteo is born from vineyards on the highest slopes of Valpolicella, with clay and limestone soils that impart minerality and structure. The traditional Veronese pergola training system ensures optimal sun exposure and grape ripening.
Organoleptic Characteristics:
COLOR: Vivid and luminous garnet.
AROMA: Inviting and warm bouquet, with notes of dried fruit, black pepper, coffee, licorice, and vanilla.
TASTE: Great structure, full-bodied and elegant. Enveloping and smooth on the palate, surprising with elegance, slight sweetness, and volume. Very persistent, with a licorice finish

Rich Pasta Dishes: Risotto all’Amarone, pappardelle with wild boar ragù, lasagna with truffles

Aged Cheeses: 36-month Parmigiano Reggiano, Monte Veronese d’allevo, Blu di bufala
Desserts: Dark chocolate cake, Amarone tiramisù, dry pastries
Storage and service:
Serving temperature: 16-18°C
Decanting: It is recommended to decant the wine at least an hour before serving to fully appreciate its aromatic evolution
Aging potential: Over 20 years in optimal storage conditions
Storage: In a cool (12-14°C), dark and vibration-free place, with the bottle lying down
